Pesticides consist of one or more active substances intended to control or destroy harmful [pests] and undesirable elements on plants and animals. Synthetic or derived from natural products, they include herbicides, fungicides, insecticides, acaricides, growth regulators and repellents. Pesticide residue analysis establishes the residual content of the active substance in the product analysed (the matrix).

According to EFSA, Maximum residue limits (MRLs) are the upper levels of legally permitted pesticide residues in or on food and feed. They are based on good agricultural practices and the principle of the lowest possible consumer exposure in order to protect the most vulnerable consumers. They are obtained after a full evaluation of the properties of the active substance and the intended uses of the pesticide. All issues related to the legal limits of pesticide residues in food and feed are regulated by Regulation (EC) No 396/2005 .
